Chicken Fried Rice
The chicken fried rice recipe is simple to make, whether using a wok or frying pan.
Breast meat is best for this recipe, however most any deboned and skinned chicken meat will work well.
White or yellow onion is typical, however your preferred onion type can be used.

Fully cook the chicken meat.
Boiling helps retain moisture, however baking the meat or getting a roaster from a local store is good as well.

Shred the chicken.
It is safest to wait for the cooked chicken meat to cool before shredding.

Sprinkle the Soy Sauce over the shredded chicken meat.
Allow the meat to sit for about 15 minutes, while working the next steps.

In a Wok or Frying Pan, cook the rice in oil over medium heat until golden color.

Reduce the heat, and then add the Chicken and Chicken broth.

Cover and allow to simmer for 20-25 minutes

Uncover and allow additional simmerying for a few minutes.
When the rice is tender, proceed to the next step, leaving this pan simmering.

In a separate pan, scramble the eggs until cooked.

Add the cooked eggs to the rice and chicken mixture.

Stir in the onion and oriental vegetables.

Simmer uncovered until excess moisture is absorbed.

This is a great recipe to use up left-over turkey meat after a big family dinner.
