Greatest Meatloaf

"Greatest" being subjective to personal taste - this great meatloaf recipe is flavorful and moist. It is best prepared on a wood fired oven or grill, giving it a delightful caramelized crust.

Ingredients
  • 1 Egg (Large)
  • .25 teaspoons Peppercorn (Ground)
  • .50 teaspoons Thyme
  • 2 teaspoons Yellow Mustard
  • 1 cup Water
  • 2 pounds Ground Beef
  • .50 tablespoons Basil
  • 1 teaspoon Sea Salt
  • 2 tablespoons Ketchup
  • 2 Beef Bouillon
  • 4 tablespoons Onion (Minced)
  • 1.5 cup Bread Crumbs (Plain)
Instructions
  1. Dissolve the Bouillon Cubes in water.

    If using dried minced onion, add the dried minced onion to this water after the bouillon dissolves completely. Allow to sit while preparing the other ingredients.
  2. In a large bowl, beat the egg lightly to mix the yolk in with the whites.

  3. Add spices, bread crumbs, mustard and ketchup to the egg bowl and gently mix.

    Brown mustard can be used and will enhance the flavor, but it may be necessary to reduce the salt some. If Italian bread crumbs are used, it may be necessary to reduce the thyme and basil a little.
  4. Add in the bouillon water and onion. Mix well.

  5. Add the beef, or other ground meat being used. Mix lightly, but thoroughly.

    We like to mix ground pork and ground turkey into our meatloaf for additional flavor and to slightly reduce fat content.
  6. Form the entire mixture into a loaf on a baking sheet or broiling pan. Be sure not to compress the meat, as this will make the meatloaf tough.

  7. Bake uncovered at 375F for about 75 minutes, until the inside temperature reaches 170F.

    We like to do this on our hardwood pellet fired grill. This process gives a delightful caramelized crust on the outside of the loaf, while keeping the inside moist and tender.
