A simple recipe for a great topping to use on pancakes, cheesecake and other fun desserts.
Make sure the strawberries are dark red and ripe.
Cut half of the strawberries into quarters.
Cut the remaining strawberries into halves
Put the strawberries and sugar into a sauce pan. Sweat for 20 minutes.
Add cinnamon and vanilla to the sweated berries, then turn on the heat.
Boil for 15 minutes, stirring constantly.
Remove from heat. Can be served hot or cold.
