Description

Scratch-made buttermilk pancakes are a delight for a homemade breakfast or anytime. Try with your favorite maple syrup.

This recipe yields about 8 typical pancakes or 12 medallions. Doubling the recipe has no issues.

This is delightful with our strawberry compote.

Ingredients
  • 2 tablespoons Butter, unsalted (melted)
  • 2 Eggs
  • 1.5 cup All-purpose Flour
  • 1.5 teaspoon Baking Powder
  • 2 tablespoons Sugar
  • .25 teaspoons Salt
  • 0.125 teaspoons Cinnamon powder
  • 1 cup Buttermilk
  • 1 teaspoon Pure Vanilla Extract
Instructions
    Combine Ingredients
  1. In a bowl, lightly beat eggs until combined.

  2. In a separate bowl, sift the flour and baking powder together to aerate the flour.

  3. Stir in the sugar and salt, until evenly mixed.

    Make a well in the middle of the mixture with a spoon.

  4. Add the milk and vanilla to the eggs, beating until well blended.

  5. Pour about one-quarter of the egg mixture into the dry ingredients well. Whisk until combined.

    Continue adding portions of the egg mixture and whisking until fully combined.

  6. Whisk in the melted butter until the mixture is smooth.

  8. On a preheated skillet or pan, pour the pancake mixture to the size and shape pancakes desired.

    Use your preferred oil or spray to prepare the pan, if necessary.
  9. Once the bottom side is lightly browned, flip the pancakes.

    Cook until both sides are golden brown, making sure to cook all the way through.

Note

Variations

The following are modification suggestions for this recipe.

Blueberry

1 cup Blueberries
2 tbsp Flour

Coat the blueberries in the flour. Once coated, fold in the blueberries gently after the butter gets added.

Chocolate Chips (or other morsels)

1 cup Chocolate Chips (or other flavored chips)

Fold the chips into the finished batter.

Cinnamon

1 tsp Cinnamon
1/4 cup Sugar
2 tbsp Unsalted butter, melted

Preheat your broiler while mixing the cinnamon and sugar, and melting the butter. Brush the butter onto each of the pancakes, then press each side into the cinnamon sugar mix and then place the pancakes on a baking sheet. Cook under the broiler until the sugar is bubbling and melted. Let sit for about a minute, then flip and repeat broiling. Served immediately plain, with honey or Greek yogurt.

Banana Stack

Plate a pancake and spread Greek yogurt on it. Evenly place banana slices, then top with another pancake and honey.
