Description

Spice it up and make it a little healthier - use only high quality ingredients, especially with the cinnamon and olive oil.

Ingredients
  • 2.5 cups Flour
  • 2 cups Sugar, granulated
  • 1.5 teaspoon Cinnamon, ground
  • 1 teaspoon Salt
  • .5 teaspoons Baking Powder
  • .5 teaspoons Baking Soda
  • 1 cup Olive Oil
  • 4 Large Egg
  • 2 cups Zucchini, grated
Instructions
  1. Pre-heat oven to 350F while preparing ingredients

  2. Grease a 9" x 13" baking pan.

  3. Mix flour, sugar, cinnamon, salt, baking powder and baking soda in a bowl.

  4. Mix oil and eggs in another bowl until smooth, then add to dry ingredients and mix well.

  5. Add zucchini stir until thoroughly combined.

  6. Spread mixture in prepared pan bake until a toothpick inserted near center comes out clean, 35-45 minutes.

  7. Allow to cool thoroughly before serving.
