Rich and fudgy, this gluten-free treat is delicious. Optionally add walnuts, hazelnuts, chocolate chips or caramel.
Preheat oven to 350F
Sift the sugar and cocoa powder into a bowl, then add salt.
Add the egg whites and vanilla.
Stir until the dry ingredients are just moistened.
If adding walnuts, chips or other mix-ins, gently stir them in.
Scoop onto parchment lined sheet pans.
Bake about 20 minutes at 350F, until the tops of the cookies are glossy and lightly cracked, and feel firm to the touch.
